Cheesy Breakfast Burritos

The school bus comes earlier and earlier every year, so having a variety of quick breakfasts is a must at our house. I used to eat breakfast burritos like this from fast food restaurants until I had my a-ha moment and realized that I could make these at home for much cheaper, and know exactly when they were made and what was in them. I make a bunch at a time, wrap them in plastic wrap and foil, and freeze them. Throw a couple in the fridge at night and they will be ready for a quick zap in the microwave in the morning. Just don't forget to take the foil off!

Cheesy Breakfast Burritos
Makes 10 servings

What I use:
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 1/2 lb. sausage links, breakfast or regular (or use ground sausage sold in 1-lb. chubs)
  • 12 eggs
  • 1/2 c. milk
  • 1 c. cheddar cheese, shredded
  • 10 all-natural whole wheat large tortillas (or make your own)
 How I do it:

1. Preheat the oven to 350 degrees F.

2. In a large pan, saute the onions and peppers. Set aside.

3. Cook the sausage in the same pan; cut into small pieces. Set aside.

4. Grease a 13 x 9 x 2 baking dish and sprinkle the onions, peppers, and sausage in the bottom.

5. In a medium bowl, beat the eggs and milk together. Pour in the baking dish.

6. Bake for 45 minutes, or until the eggs are cooked through.

7. Let the egg casserole cool for 15 minutes, then cut into 10 equal pieces.

8. Assemble the burritos by following these steps:

Place one egg serving on one tortilla.


Put some cheese on top of the egg.


Fold the sides of the tortilla in over the egg and cheese.


Fold the bottom up over the middle, then fold up again.



All done!
 

Wrap them individually in plastic wrap and foil, then freeze them. For best results, thaw them by throwing them in the fridge the night before, then pop them in microwave for one minute in the morning.

You could also defrost them in the microwave the morning you want them, then microwave for 45 seconds.
