Italian Herb Dressing


Bottled salad dressing is expensive! And don't even get me started on the funky things they put in there. This simple dressing is perfect over your favorite lunchtime greens or for marinating meat.

 
Italian Herb Dressing
Makes 1 1/3 cups

What I use:
  • 1/3 c. water
  • 1/3 c. red wine vinegar
  • 2/3 c. olive oil
  • 1 tsp. sugar
  • 1/4 tsp. salt
  • 2 tsp. Italian seasoning
  • 1 tsp. yellow mustard
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. minced garlic in oil, optional if you really like garlic

How I do it:

Blend all ingredients in a blender or mini food processor for 1 minute.

Store in the fridge, keeping in mind the oil will solidify. Take it out 20 to 30 minutes before you need it, and shake vigorously.

Note: If you like your dressing extra herbacious, up the Italian seasoning to 1 Tbsp.
Garlic lover? Add a teaspoon or two of minced garlic as well as the garlic powder.

While this dressing tastes great right away, it tastes even better if you let the flavors come together for a few hours first.

The family says:

  • K doesn't go for creamy dressings like most kids do. He prefers Italian and Caesar dressings. He calls them "Olive Garden dressing". He preferred it with the extra garlic.
  • Andrew is a total ranch man. He didn't love this, but said it was good for what it was.
  • This is a close second to my favorite bottled Olive Oil and Vinegar dressing, but I go back and forth between the two, just to keep things interesting.
