Pizza Quesadillas (or is it Quesadilla Pizza...?)

We are big pizza eaters around here. And by we, I mean the boys. I eat one slice and I'm happy but they can kill a whole pie by themselves in under 20 minutes. This can get expensive if you're ordering in and time-consuming if you're going the DIY route. I like to mix it up with French bread pizzas, English muffin pizzas, and lately, quesadilla pizzas. Andrew is a purist so he isn't a huge fan, but K loves them. Sometimes he even asks me to send them to school in his lunch box. (I'll take that over the school's cardboard-pizza Fridays any day!)

Pizza Quesadillas
Makes 1

What I use:
  • 1 whole wheat taco-size soft tortilla
  • 1/4 c. pasta sauce (homemade)
  • 1/4 c. mozzarella cheese

How I do it:

1. Warm the sauce in the microwave for 20 to 30 seconds.

2. Warm the tortilla in the microwave for 10 to 15 seconds.

3. Lay the tortilla out and spread the sauce on half of it.

4. Sprinkle the cheese over the sauce.

5. Fold the dry half over the saucy-cheesy half and lightly press down.

6. Heat a skillet over medium heat with a quick shot of cooking spray.

7. Cook the quesadilla until brown and crispy, 1 to 2 minutes per side. (Brown and crispy can quickly turn into burned and inedible, so don't walk away.)

8. Let cool on a plate or cutting board for 5 minutes before cutting into wedges.

Feel free to add classic pizza things like pepperoni or veggies. Make sure you cut everything thin or the whole thing will fall apart.

What is your favorite pizza variation?
