Quiche has been one of my favorite foods for as long as I can remember. When I lived with my grandma, we would buy the little 5-inch personal quiches in all the flavors the grocery store had. Then we'd take them home and split them between us. Our plates would be full of different quiche halves and we'd eat every crumb. Ham and cheese, spinach, plain - they were all amazing. But now that I know how easy they are to make, I don't have to run to the store to get this eggy deliciousness. This one's for you MomMom.
I'm a food-obsessed mom trying to stay sane while feeding one baby, one tween, and one picky husband. Feel free to wander around my crazy kitchen.

The Dr. Seuss Special
Since we're on the subject of sneaky foods kids love, I present to you The Dr. Seuss Special. When I used to babysit my sisters, this was one of their favorite breakfasts. Back then I used green food coloring, but not anymore. I found a natural alternative that works just as well. It's...

Meringue Cookies
I did it! I did it! Seven batches and dozens and dozens of cookies later, I finally got these to turn out exactly the way I wanted them to. The funny thing is I avoided making them forever because I was terrified of messing them up, but they are actually really easy. The hardest part is waiting for them to "cook" or dry out.

Perfect Hard Boiled Eggs
We are big hard-boiled egg eaters around here. I buy eggs in two and a half dozen packs and they are gone within a week. Over the years, I have had more than my share of green yolks, sticky shells, and raw centers. But, I'm happy to announce that has all changed. It took dozens and dozens (and dozens!) of eggs and lots of trial and error with several different methods, but I have finally figured out how to make them perfect every single time.

French Toast Casserole
French toast without spending an hour at the griddle? You had me at "french toast"! I love this because you throw it together before bed, then let it hang out in the fridge overnight to soak up all the yummy goodness. Roll out of bed in the morning, pop it in the oven, and you've got a happy family. It's like a wonderful bread pudding / french toast hybrid thing... just wow.

Cheesy Breakfast Burritos
The school bus comes earlier and earlier every year, so having a variety of quick breakfasts is a must at our house. I used to eat breakfast burritos like this from fast food restaurants until I had my a-ha moment and realized that I could make these at home for much cheaper, and know exactly when they were made and what was in them. I make a bunch at a time, wrap them in plastic wrap and foil, and freeze them. Throw a couple in the fridge at night and they will be ready for a quick zap in the microwave in the morning. Just don't forget to take the foil off!
